Today the cellar is led by winemaker Eric Germain and draws on vineyards across the Côte de Beaune. This Bourgogne Aligoté comes from remarkably old vines, averaging around 80 years, in the commune of Meursault on clay-limestone soils.\u003c\/p\u003e\n\u003cp\u003eThe fruit is hand-picked and sorted in the vineyard, then lightly crushed and pressed. It ferments with indigenous yeasts in 500-litre French oak barrels, none of them new, and rests on fine lees for six months without stirring. A short spell in tank, a light fining and filtration, and it is bottled for freshness.
