Clément Lavallée works out of Saint-Bris-le-Vineux in the Auxerrois, where he and his sister Caroline have run the family's 14.5-hectare estate since 2021, alongside the wines he bottles under his own name. The vineyards are farmed without herbicides or insecticides, and nothing is added in the cellar by way of yeast or bacteria.

45 Degrees takes its name from the steep 45° slope it is grown on, planted on Kimmeridgian soils. It is fermented with native yeast and raised in stainless steel, giving a lean, mineral Chablis with lemon zest, green apple and pear over a flinty, saline edge.
