Clément Lavallée works out of Saint-Bris-le-Vineux in the Auxerrois, where he and his sister Caroline have run the family's 14.5-hectare estate since 2021, alongside the wines he bottles under his own name. The vineyards are farmed without herbicides or insecticides.

Côte de Jouan comes from a tiny northwest-facing Premier Cru parcel on Kimmeridgian marls. It is fermented with native yeast, aged in older barrels and then given further time in stainless steel, building texture around citrus, pear and white flowers with a taut, saline finish.
