Clément Lavallée works out of Saint-Bris-le-Vineux in the Auxerrois, where he and his sister Caroline have run the family's 14.5-hectare estate since 2021, alongside the wines he bottles under his own name. The vineyards are farmed without herbicides or insecticides, and the wines are made without added yeast or bacteria.
