Thomas Bouley's eight hectares are easy to spot on the Côte de Beaune. The canopies are trained unusually high and hedged late, and the soils are kept supple and grassy. The result is healthy, open bunches and some of the most admired Volnay in the village.
Clos de la Cave is a 0.68-hectare monopole on a steep, south-east-facing slope. The 2023 is wonderfully perfumed, with rose petals, incense, spice and raspberry. It is medium to full-bodied, velvety and layered, with polished tannins and a long, aromatic finish.
Classic, silky Volnay for roast quail, duck or veal, and it will keep developing for many years.
