Domaine Jean-Marc & Hugues Pavelot is one of Savigny-lès-Beaune's reference estates, and its white Corton is among the rarest wines in the cellar. It comes from a single 0.09-hectare parcel in the Les Chaumes lieu-dit, on a steep, southwest-facing slope of the Corton hill. The vines were planted in the 1980s on shallow yellow, ochre and brown marl. The domaine is certified organic (AB, 2024).
The grapes are pressed directly, lightly settled and fermented with ambient yeasts. The wine then ages for 12 months in once-used barrel before a light filtration. Production averages only about 25 cases a year. Expect a broad, dense, generous Grand Cru Chardonnay with the depth and structure that white Corton is known for.

A true rarity. Give it a few years in the cellar.
