Vincent Girardin founded his Meursault house in 1980, aged just 19, with two hectares of family vines. Today the cellar is led by winemaker Eric Germain and draws on vineyards across the Côte de Beaune. This Bourgogne Aligoté comes from remarkably old vines, averaging around 80 years, in the commune of Meursault on clay-limestone soils.

The fruit is hand-picked and sorted in the vineyard, then lightly crushed and pressed. It ferments with indigenous yeasts in 500-litre French oak barrels, none of them new, and rests on fine lees for six months without stirring. A short spell in tank, a light fining and filtration, and it is bottled for freshness. Expect lemony aromas, a fresh palate with lovely tension, and a fruity, elegant finish.

Serve at around 12°C as an aperitif with charcuterie, shellfish or jambon persillé.
