Domaine Bernard Defaix is a family estate on Chablis' left bank, and its village Chablis is a textbook expression of the appellation. The vines grow on Kimmeridgian limestone and marl, the fossil-rich soils that give Chablis its chalky, oyster-shell character.
The 2025 is bright, crisp and full of energy. Expect a flinty, stony nose lifted by lemon, grapefruit zest and white flowers. The palate brings green apple and citrus, and zesty acidity carries it to a long, clean, saline finish. 12.5% alc., sealed under Diam.
An honest, mineral Chablis for oysters, grilled fish or a simple weeknight glass.
