Sentio is the label of winemaker Chris Catlow, who has a knack for finding cool, marginal sites. This Pinot comes from the Coola Road vineyard at Mount Gambier, close to the Southern Ocean, where the vines grow on limestone and fractured flint.
A small portion of whole bunches goes into a concrete ferment, and the wine is then raised in large-format demi-muids and puncheons, so the oak stays in the background. Expect wild strawberry, red cherry and rose petal, with a little spice and earth. The palate is bright and juicy, with silky, fine-grained tannins. Sealed under Diam.
Seriously good Pinot for the money. Try it with duck, roast chicken or mushroom dishes.
